I've screwed up quite a few brownie mixes. I think sometimes its because I don't have the exact oil they're looking for and have to sub a different type or try to melt I Can't Believe It's Not Butter.

I made some for my nephew once after my mom died. OMG, we had to throw the entire thing away. Worst brownies ever. Dirt probably tasted better.

For what it's worth, it tasted good, even if it wasn't all that pretty. I made a second one last week with a shallower pan that baked easier. Only problem is I realized whipping cream and lactose intolerance aren't the greatest of combinations. Oh well.

People say you have to learn to cook, but I could study cooking the way I did the bar exam and still flunk out. It's just not in my genes. However, I am working on my PhD in microwaving.

Actually it's my mom's recipe; my grandmother just had it written down, like she was going to one day bake or something (highly unlikely since you can't even get her to get off her butt to microwave). The hole didn't bother me, esp. since I was the only one eating it, but should I ever serve it to other people, I'll definitely keep the brownie idea in mind.

I thought about making it again this weekend and using the loaf pans. I still don't want to waste $12 on a real pan until I have money to waste. Might check at Dollar General first though & see how much their real pans are. Might be cheaper than Wally World.

A lot of learning to cook is practice. Add that extra vanilla because that's the way you like it. Try cooking it in a loaf pan. If you bite a hole in the middle, cut it into squares and serve it like brownies. The worst part about your cooking is thinking you will fail. You won't always, and in failing you'll learn to be a good cook. Some day your kids will be wanting your recipe.

Oh, I used a toothpick. I just didn't trust it, or maybe it's that I didn't quite understand the toothpick method fully. As my nephew says when it comes to me and video games, I'm always overthinking so I think I overthought the toothpick too much. Hence, the stick your finger in the middle of the cake method. The finger doesn't lie.

My grandmother had always wanted to know if you could make it with Splenda (she's diabetic, not that it has ever stopped her from eating cake; she plays the D card when it's convenient) so I tried to use the leftover ingredients to make one the other day. Yuck. Trust me when I say you can make a lot of things with Splenda, like my mom's cheesecake recipe (the no bake pie kind), but you can't make a poundcake with one. The batter ended up like pizza dough, and despite the fact that I piled on the vanilla it tasted like flour. It was just bad. I read on the Splenda site after the fact that they don't recommend it for pound cakes. Too bad I didn't know that before I wasted the leftover ingredients.

BTW, I plan on stopping by and catching up on two weeks worth of posts later in the week. I'm in the middle of a blog design for someone. Soon as I'm done, I'll be by to read. Has Bob the Vegan been on anymore misadventures?

My problem is I have very little cooking instincts other than to have the fire extinguisher close by, LOL. The cake actually tastes a little richer today. I think maybe eating it hot had something to do about it, but I'm still going to try more vanilla next time. I bought cheap, imitation vanilla. I don't know if that made a difference, too. The recipe just said vanilla.

I'm learning, but I still love my microwave.

Hey, long time no post. I was wondering where you went.

I'll have to try more vanilla next time. Like I said, my mom never strictly followed the recipe. Half the time she couldn't find it so she did it from memory and just added what she thought looked right.

It's still sweet; I just think it could be sweeter.

It would have been a lot prettier had I used the right kind of pan and not picked so much. The pound cake pans were almost $12 at Walmart, and I didn't want to spend that much until I knew whether I could make it, esp. since I was also spending $6 on the mixer. I ended up using those foil pans.

As for the picking, the crust is the best part, esp. when it's still warm. My mom used to have to keep me away from the fresh baked ones at the holidays, esp. if we were taking the cake to my grandmother's house for dinner or she was taking them to work (she'd make everyone one at Christmas every year). If she didn't keep me away, a good section would be gone.

This time, I just kept picking further and further down until oops, I had a hole, but I think the hole might have made the middle finally cook.

Anyway, the cake got the dogs' seal of approval. Bailey never eats sweets. I can make cookies, muffins, you name it, and he turns his nose up at it, but he always loved my mom's pound cake and cheesecake (the only other thing she could make without screwing it up). He ate this cake so that makes me feel I did it right.

Now if I can just figure out her cheesecake recipe. It was a recipe she found on the back of a Jello pie crust label years and years ago. I've tried Googling it, but every time I try, I get results for that nobake cheesecake mix that Jello sells.

Hey girl!! Congrats on the cake!!! No matter what it looks like, it's all about the taste and the memories it brings you! Hope you're doing well down there, it's been a busy summer so far, but I'm still popping in to check on ya!

PS - I always double the vanilla extract in pound cakes, seems to need it for some reason!
